So, big day today. Adoptive placement happens in about an hour. I'm not totally sure what that means but what I do know is that I don't have to send our case worker a report about what Ben does each day. Yep. Been doing that for over a year. How many ways can I say that he sat there and played with a toy and napped? There are 739 ways. Luckily, around day 365 I could say he started walking around and playing with toys. That was a refreshing change. The actual adoption date should be scheduled in a few days. Get excited.
Now on to more important things...feeding the boys this week. It is a simple food week. Tonight is Baked Chicken Legs with Zucchini Parmesan Chips. So easy and so crazy good. Tomorrow will be Pan Fried Pork Chops with rice. Never actually had these but what could go wrong with pork chops? We have rice about once a week. Nothing fancy. Just plain white rice. I add butter to mine because butter rocks my face off. The boys don't get butter yet...they have to earn that privilege. I come from a family of rice farmers so it has been a staple in my eating like for 31 years. Towards the end of the week we will be having Sausage and Pepper Skewers. Trying to find a way to use up some deer sausage. Also on the to do list this week is making zucchini muffins. These are really good and freeze well. I just take a few out in the morning and stick them in the kids lunch box on school days. The are thawed out by lunch.
Today was back to school day in Houston. My kids only go once a week and don't start for another 2 weeks so we are going to enjoy all the parks and Targets and Chick-Fil-As that we can while the big kids are gone.
